Three Layer Peppermint Cake

   Betty Crocker always says “Let’s Bake a Moment Together”.  Well that is just what I did.  This cake tasted extra sweet this morning for breakfast, with it snowing like crazy outside, the entire family was home,  and we all enjoyed a slice all together.  That is a perfect moment in my book, and a perfectly easy festive peppermint cake too.  I will show you just how easy this “semi-homemade” cake is.  I started with a white cake mix.  After preparing it as directed to on the box, I reserved some batter to add a tiny bit of peppermint extract, cocoa powder, and red food coloring.  This will be how you get the beautiful peppermint marbling.  The three (8 inch) round cakes take only 20 minutes or less to bake up.  Once they are cool, you will ice it with two containers of Betty Crocker Whipped Fluffy White frosting.  To get the red layers of frosting you will take 1/2 of one container of frosting and mix it with the same ingredients you used for the cake mix, a tbs of cocoa powder, red food coloring, and a dash more peppermint extract.  For the complete recipe and exact measurements check out the link below.  You will want to use the extract sparingly, or you will feel like you are eating an entire box of breath mints and not a delicious peppermint cake.  If peppermint is not your favorite, you could use a cherry or different flavored extract and still have a festive colored cake.

So pretty with the red marbling and so easy to do.

Putting a small spoonful of frosting down first will help keep your cake in place.

Frost the outside first with white then the red peppermint frosting in the middle so that when you frost the entire thing white it will look clean. Repeat this process for the second layer too.

Once your third layer is on, frost the entire cake white, I like to do sides first.

After frosting the top white take your remaining red and go on top only.  Then add your Peppermint Crunchy Baking Chips on edges, they give the cake some nice crunch like nuts would.

Then enjoy as I did with a nice hot cup of coffee or tea.  I served  this on a pretty white plate so that the red would really pop.

I wasn’t the only one that enjoyed it, however I think I managed to stay a bit cleaner, lol.
