I love this recipe for its ease in preparation, I call it a “one pot stop”. It is also very tasty with a creamy garlic base and tender Italian potato dumplings called gnocchi. My eight year old son, who is a picky eater, loved it too. Very satisfying on a cold day or a nice light dinner with a salad in the summer time.
