Light Pineapple Upside Down Cake Cocktail

Last week I had fun making a S'more cocktail.  This week I have a new fun cocktail to share. Again I tried to  keep it on the lighter side.  I used low fat milk, and 100% no sugar added pineapple juice.   By putting my liquid ingredients into my ice cream maker, I came up with a perfect refreshing Summer time cocktail.   3. that whipped stuff is stellar all on its own, chilled … caution should be used as it gives you a wicked headache the next day (gee, how would I know that??)… I make a pretty good upside down pinepple martini too … uses vanilla vodka, grenadine and pineapple juice … yummm… (the milk scares me a tad in a cocktail, not sure why?)

  4. First the s'more cocktail, now this! I am in love! My friend brought over a bottle of that whipped cream vodka and we drank it straight (probably not the best idea)! This looks amazing.And if you use cocktail umbrellas – just think how quickly you can assemble a parasol wreath after a few parties!Kelly
